If you're going to Arches, consider the following easily accessible (i.e., not long hikes) and nearby points of interest:
1. Mesa Arch in Canyonlands NP (sunrise)
2. Dead Horse Point State Park (early morning)
3. Fisher Towers (late afternoon)

I will be going on a road trip this July with family and visiting places like Mt Rushmore / Black Hills, Arches National Monument, Craters Of the Moon, Yellowstone, Grand Canyon, etc. Any suggestions for other similar places? My family is not photographically inclined, so suggested spots would need to keep that in mind--they should be interesting for the non-photographer as well.

Suggest you look at Navajo Reservation (4 Corners) for enroute ideas. Hubbell Trading Post will give family something to look at, as will it give you opportunities (as well as surrounding area). Look at
www.navajonationparks.org
and
www.nps.gov/hutr/
 Slot Canyons and cliff dwellings are both photogenic and generally interesting. Enjoy your visit!

It will be like a 2 week marathon trek, driving a few hundred miles each day. I should have my EOS-1Ds by then...
