Guide explaining picture profiles?

I see lots of recommendations for setting picture profiles for various video cameras, but I can't seem to find a good guide that explains what they all mean and what they do.
I'm looking for something like 'Picture Profiles for Dummies'.
I come from a photography background and can process my photos in Photoshop and Lightroom, but I am not sure what 'knee' and 'gamma' really mean and how changing them affects my picture quality.
Has anyone found something useful in this area? Something with screen shots that show the results of the changes in settings would be really helpful.

Gamma just another word for Curve - apple M in photoshop
Mostly a normal gamma lifts the mids
Knee is a flattening of the top of the curve in an effort to stop highlights clipping
IMO Knee is the devil and give the video look of plastic skies, or plastic skin if your skins enter the knee zone.
Now. there is also some gamma stuff for different screens, basically AFAIK CRT screens crush the darks - so video people apply a standardised curve to counter this, lifting the darks

Appreciate your taking the time to try to answer my questions about knee and gamma, but this is not what I am looking for.
I am looking for a guide that will explain all the picture profile settings.

Some of it is wrong, the muddle negative and positive up and use phrases like 'more black'

Profile Settings are camera specific. Look at the various fora for your particular camera.
