I am wondering if I should shoot in "Faithful" or "Neutral" mode with the 5D II? Mostly interior mixed lighting halogen and natural. Also, do you find that either of these do well in outdoors settings with all natural light?

Beyond a general Previewing of the file, those modes are meaningless if you shoot raw as they are based on a JPG conversion. If you are shooting Jpegs of interiors learn to shoot raw and read the histogram for proper exposure. The raw files give you much more flexibility in post processing.

Agree with Kirk. The only other think I'll add is that I find it worthwhile to create a custom 'picture style' that comes as close as possible to showing me on the LCD what the actual RAW exposure will look like when I get it on the computer. Typically this means turning down sharpening to zero as well as reducing saturation and contrast somewhat. It's still not exact but better than any of the canned picture styles.
