Epson does not seem to have a profile posted for satin canvas on the R3000.  They say this is a supported paper.  Any ideas on where it is hiding?  If Epson does not provide one is there one available elsewhere?

I have one.  It either came with the disc for the printer, or from the Epson site who has a bundled software download.

by the way, have you printed any canvas sheets, or are you printing from a roll like me?  Just curious what media paths are working for your canvas.??

I print from a roll, usually panoramas.  I have been using a r1900.  I'm just getting started with the 3000.

I'm running Mac Osx 10.8 and the instructions are to get the driver from Apple.  Do you know the name of the file maybe I can find it by name.
